INGREDIENTS:

  1. 1.5 cups all-purpose flour/maida
  2. 1 teaspoon baking powder
  3. ½ teaspoon baking soda
  4. ¾ cups granulated sugar
  5. A pinch of salt
  6. ½ cup of water
  7. ½ cup melted butter or oil
  8. 4 tablespoon yogurt/curd + 1 tablespoon water
  9. 1 tablespoon apple cider vinegar or white vinegar or lime juice
  10. 1 teaspoon vanilla extract

 PROCESS:

  1. Preheat the oven to 180 degrees celsius.

  2. Sift the dry ingredients- flour, baking powder, and salt together. Do not add the baking soda at this stage.

  3. Melt the butter and while it’s still hot mix into it the sugar and keep aside.

  4. Separately whisk together the yogurt (4 tbsp) and water (1 tbsp) till it’s smooth. Then add the vinegar to it and mix well.

  5. To this mixture of yogurt, water, and vinegar, add the baking soda and stir. You will see some bubbles arise.

  6. To the dry mix from step 1, add the butter and sugar mixture and then immediately add the yogurt, water, vinegar, and baking soda mixture to it as well.

  7. Add the vanilla extract.

  8. Gently fold together all the ingredients. Be cautious not to stir or mix the ingredients but to fold them into each other to make a lump-free cake mixture. Do not overdo the folding.

  9. Take a 6” cake tin and line it with parchment. Alternatively, you can also generously coat the sides and bottom of the tin with melted butter or oil.

  10. Pour the cake batter into the tin and shake it and tap the tin onto the kitchen counter to release any air bubbles.

  11. Bake the cake at 180 degrees C, for 30-35 minutes.

Check the center of the cake by inserting a toothpick or knife. If it comes out clean and batter-free, the cake is ready! Get it out of the oven and let it cool, preferably on a wired rack. Once it’s cooled to room temperature, you can remove it from the cake tin and serve it either as it is or with flavored glazes or sauces as per your taste.

The vinegar and baking soda have been added as an egg replacement to help the cake rise. You can alternatively use 1 egg and opt-out of putting in vinegar and baking soda.
